Trim Healthy Chicken

 

We are on week 2 of our Trim Healthy Mama eating. And I am LOVING IT! The food is great, and it is pretty easy to tweak our family favorites.

This meal started with the intensions of being an E, but then I wanted something creamy and cheesy, so I modified my thinking and this meal was born from what I had in my fridge!

This is what you need for this super simple meal:

Creamy Chicken and Squash (S)

2 Chicken Breasts, sliced (or tenders)

2-3 Zucchini (sliced into circles)

2 TBS Cottage Cheese (I had 4%)

2 TBS Plain Yogurt

1 tsp Tomato paste

Garlic Powder

1 bunch Kale

Black Olives (optional, for topping)

Coconut oil

GO:

In a skillet, brown your chicken (diced or sliced) in 1 TBS coconut oil until it is opaque, but not all the way cooked. Add more oil if needed and toss in your zucchini slices. Add salt and pepper and cover for 10 minutes until the zucchini starts to soften. Add cottage cheese, tomato paste and yogurt and stir so it is mixed. Cover again and let cook until the cheese is melted and the zucchini is browned and soft. *Keep the lid on to retain the moisture, or you will have to add some chicken or veggie broth to the skillet).

In a separate skillet, heat another TBS coconut oil and add chopped kale with a dash of ground nutmeg. (Nutmeg cuts the bitterness of greens). Saute until it is crisp tender. Top it with butter and salt and you are good to go!

I am going to make this again, but I am going to top it with mozzarella and let it melt all gooey!

    1. Me too! I have been experimenting with the sunburst squash too- it is almost too cute to dice up and eat! Yum
